Not how it works. Humanity is a measure of your sanity in Cyberpunk. Based on your Empathy stat and is a side effect of Technoshock, the mental illness brought on by inability to adapt to the rapid pace of change in the Cyberpunk future.
When you lose your Humanity and your Empathy goes to zero, you become a psychopathic psychotic. No longer a player character or sane by any measure.
It's not let's-be-a-cool-robot time, it's stop the maniac with an axe time.

So I would say Humanity and Empathy are still an in world thing, just not part of V's character options.
Very few players in any game I ran went c-psycho anyway. They would get close and then get therapy or trade out cyberware with therapy to afford the new one. It's a cool mechanic and a good limiter, but in practicality, you rarely saw Player Characters go nuts
Probably affect dialogue and social interaction. That was the important part of Empathy for me. The limit to Human Perception, Fast/Talk, etc.
It could really open up some Terminator style quest or playstyle or something. Sounds awesome being a Cyborg devoid of Humanity. :/

I have a titanium bolt in my arm. Been there for years. You can look up prosthetics and human flesh - certain metals, sterilized, are quite fine mated to flesh.

Yeah, we've been able to put implants in people for years. Bolts and pins, pacemakers, hell we've even got artificial hearts.
Really the tech we're missing is the neural connection to make things responsive enough to work like proper limbs. We've got back hand/arm replacements, but they don't work nearly as well as a real hand can.

I've never played Cyberpunk. Closest I've played is Shadowrun (which I love).
I have had several characters that I've brought down to the limits of my humanity. Of course, there were also perks to losing your humanity in Shadowrun, which they track through Essence. One of which being that magic (as Shadowrun is a mix of cyberpunk and magic) is keyed into Essence. So getting cybered destroyed your magical skill, but it also made you very resistant to magic cast by others, so that fireball that toasted your all natural friend barely leaves a mark on you. :p

He mentioned recently on the Joe Rogan podcast that the first few human recipients will be patients with terminal illnesses. Then, if all goes well, he’ll put himself under the knife and have one implanted into his brain as well.
